Caramelised Tomatoes

  1. Preheat your oven to 160°C.
  2. Cut all your Tomatoes in half from side to side (i.e. don’t cut through the stork hole).
  3. Set them in a oven proof dish and cover them in a good glug of Olive Oil.
  4. Then add a good amount of Salt and Pepper to each, followed by a tsp of Dark Muscovado Sugar.
  5. Place in the oven 2 hours.
  6. They will be sticky and glossy when they are done. Enjoy them hot or cold.
